So, for those of you who know my husband probably know that he doesn't eat chicken. He really doesn't like any "hunks" of meat either. i.e. steaks!! So, since we have been married it has brought on some cooking challenges for me!! I LOVE chicken and usually end up eating while we are out. Well, lately I have been cooking at home trying to save us money and our health!! ;) So, last night we had Salsa Turkey and low and behold Bryan liked it!!! YEA!!!! We have success!!!! :) I am super excited that means that I can start trying to incorporate other recipes I used to use chicken with and switch it to turkey!!! :) If any of you are interested its a super simple recipe. :)
Salsa Turkey
6-7 Cups Pace Salsa (remember its get hotter/spicier as you cook it)
2 Turkey legs (skinned and de-viened)
2 Turkey Thighs (skinned)
Placed all ingredients in a large pot for 1-2 hours on low/simmer heat, checking occasionally to make sure the salsa is not burning on the bottom. Once all the turkey is thoroughly cooked remove the meat from the salsa mixture and remove the meat from the bones, shred the meat and place the meat back in the salsa mixture. Serve warm. It also refrigerates well for up to a week and you can also freeze some for the future. :)
Goes well in burritos or over rice. You can also serve it cold over some lettuce for a yummy taco salad, no dressing necessary!

I'm not a fan of "chunks of meat" either. Thanks for this recipe and the idea to try turkey, I'm definitely going to try it!
